Vegan Whole Grain Pancakes

2 cups unsweetened almond milk (we use vanilla)
1 Tbs apple cider vinegar
~ Stir these together and set aside for a few minutes to curdle.
2 cups whole wheat flour
1 Tbs baking powder
1/2 tsp salt
~ Combine these in a large mixing bowl.
2 Tbs ground flaxseeds
1/2 cup water
2 Tbs oil (light flavored olive, coconut or melted butter if you’re not going vegan)
2 Tbs maple syrup
1 tsp vanilla
~ Mix these together, then whisk together with the milk mixture, for a good 30 seconds to a minute, until frothy.
~ Add the liquid ingredients to the flour mix and stir until just combined.
~ Then fold in:
1/2 cup rolled oats (you can pulse them first in a cuisinart or just leave them whole - up to you)
Cook on a lightly oiled griddle or cast iron skillet. Top with: fresh or warmed, frozen berries, cooked apple or peach slices with cinnamon, and maybe a drizzle of maple syrup (as a Vermonter, I vouch for Grade B only - I mean, it’s the only way.)
