1/4 cup olive oil
1/2 tsp salt
2 tbs vinegar - one you like: wine, citrus, apple cider
2 tsp honey or maple syrup
1 tsp dijon mustard
1 1/2 to 3 tsp fresh grated or minced ginger, to taste (mmmm use more!)
1 clove garlic, crushed or minced
Tear or chop raw kale into bite sized pieces, pour the dressing over and scrunch it in with your hands to spread evenly and bruise or soften the kale a little. If you like, add roasted squash cubes, cooked lentils or whatever strikes your fancy. Multivitamin in a bowl.
