Kitchen Sink Cookies

In a mixing bowl, beat together the following:

3/4 cup unrefined sugar (I used more like 1/2 cup, which is plenty for me)
1/4 cup softened coconut oil (I was a little stingy with this, too)
1/3 cup unsweetened applesauce (and a little over generous with this to make up for it)
1 tsp vanilla
1 tablespoon ground flax seeds (this is the binder rather than eggs, so use it!)

Then, sift in the following:

3/4 cup whole wheat flour (or whatever non-wheat flour you like)
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon fine salt

Finally, fold in:

1 cup rolled oats
1/2 cup dark chocolate chips (don’t use more or they won’t “fit” in the dough)
1/2 cup raisins
1/2 cup toasted and coarsely chopped nuts (I used almonds this time)

Drop or scoop on cookie sheets to form nice 3-bite-sized cookies. My batch totaled 20 of them. You may need to use your fingers to smoosh all the bits together, and flatten a little on the top. After 11 minutes or so, when they’re done, transfer to a rack to cool.
