Vegan Caeser Dressing

Soak 1/3 of a cup of raw almonds in 1/3 of a cup of water for an hour or so. (15 minutes will do if that’s all you have, I won’t tell anyone.)
Add to a blender or food processor:
2 cloves of garlic
1/4 cup olive oil
the juice from 1/2 a lemon
a teaspoon of dijon mustard
a teaspoon of apple cider or rice vinegar
1 tablespoon of capers (Yes, capers, just trust me. You probably already have a jar you’ve forgotten about in the dark recesses of your fridge.)
Whiz everything including the almonds and soaking water for a minute or so until it’s smooth and looks creamy.  You can always add a little water if you need to, and you may need to stop and scrape down the sides.
