Jerk Sauce for Veggies

A lot of times it’s the stuff on the food that we go for – spices, sauces, dressings, not so much the thing underneath. So why not make that thing a great-for-you veggie that you’ve been meaning to eat more of anyway? Use this jerk sauce as a marinade or just brush it on cut up broccoli, cauliflower, carrots, mushrooms, peppers, onions, corn… you get the idea. Then roast or grill away.

Puree in a blender, adding a little water if you need:

1/2 chopped onion

2 cloves garlic, crushed

2 tablespoons fresh ginger, chopped

3 tablespoons fresh lemon or lime juice

3 tablespoons soy sauce or tamari

2 tablespoons olive oil

2 tablespoons maple syrup

2 teaspoons thyme

1 teaspoon allspice

1/4 teaspoon cinnamon

1/4 teaspoon cayenne pepper

1 teaspoon nutmeg
