Chimichurri Sauce

4 cloves of garlic

1 cup fresh cilantro

1 cup fresh parsley

1 teaspoon dried oregano

1/4 cup red wine (or other) vinegar

2 tablespoons olive oil

1 tablespoon tamari or soy sauce

3/4 cup broth (veggie or chicken or even water is totally fine)

red pepper flakes, salt and pepper to taste

Blend it all together.

Seriously, that’s it. Use it as a marinade for protein (chicken, fish, tofu), a dressing for greens (doubled-down greens, be still my heart!), a sauce for any kind of cooked veggie, a drizzle in an otherwise boring sandwich or in an omelette.
